It's that time of year! We always plan on planting our potatoes on Good Friday, so we ordered our seed potatoes this week to prep and will plant next week.
We chose two varieties this year. The first one is an all-around, good multipurpose potato, the Yukon Gold. That's what's on the right, which is about one pound of potatoes. We generally expect about five pounds of potatoes per plant. Since these don't store well, we will likely can most of what we harvest but will definitely enjoy garden fresh taters at harvest time!
Canned potatoes can later be mashed, but our favorite use is fried breakfast potatoes! You can cut them into fries before canning too, then just pop.open the jar and throw in the fryer!
The second variety on the left is called German Butterball. These, too, can be used in all various ways, but they store better than just about any other variety out there, which is why we are planting three pounds. If stored properly, they will keep for about 8 months. With a fall harvest, we'll be enjoying these until the following summer!

So how do you prep the potatoes to can them? We plan on planting potatoes and onions only this year, since we are so busy in the summer. I dont want to plant a bunch and have them go to waste!!!
My mom always did, and it never failed. We always had good taters.
